Step-by-Step Instructions

1. Cut the Chicken Into Even Pieces

Place the chicken breasts on a clean cutting board and trim away any obvious excess fat or tough connective tissue. Cut the chicken into approximately 1-inch pieces.

Try to keep the pieces close to the same size. This is more important than making them perfectly shaped. Evenly sized chicken bites cook at roughly the same rate, so you are less likely to end up with some pieces dry while others are undercooked.

The pieces should be similar in size to large bite-size cubes.

Do not cut some pieces tiny and leave others very large. Uneven pieces cook unevenly.

2. Pat the Chicken Dry

Use paper towels to gently pat the chicken pieces dry. Transfer them to a large mixing bowl.

Removing excess surface moisture helps the oil and seasonings coat the chicken more evenly. It also encourages better browning in the air fryer.

You do not need to make the chicken completely dry. Just remove obvious excess moisture.

3. Season the Chicken

Toss thoroughly until every piece has a thin, even coating of oil and seasoning.

The chicken should look evenly seasoned with no large clumps of dry spices sitting at the bottom of the bowl.

Do not pour excessive oil into the bowl. Too much oil can make the chicken greasy rather than lightly browned.

4. Preheat the Air Fryer

Preheat the air fryer to 400°F for about 3 minutes, if your model recommends preheating.

Preheating helps the chicken begin cooking immediately and can improve surface browning. Some air fryers do not require this step, so follow your appliance instructions when necessary.

5. Arrange the Chicken in the Basket

Air fryer models vary in power, so start checking early rather than automatically adding extra time.

7. Check the Internal Temperature

Insert an instant-read thermometer into one of the largest chicken pieces. The center should reach 165°F.

If the chicken has not reached 165°F, return it to the air fryer and cook for another 1 to 2 minutes, then check again.

Do not keep cooking the chicken far beyond 165°F just to make it darker. Chicken breast can dry out quickly when overcooked.

8. Add the Optional Finishing Touches

Transfer the hot chicken bites to a clean serving bowl. For extra flavor, toss them with melted butter, fresh lemon juice, chopped parsley, or grated Parmesan.

Let the chicken rest for about 2 minutes before serving. This short rest also makes the bites easier to handle when they are very hot.
